Dalmore Constellation 1992, Cask No. 18
Maturation Journey:
Under the watchful eye of Master Distiller Richard
Paterson, this spirit was initially matured in American
white oak first fill Kentucky Bourbon barrels, to give
it a flawless base of vanilla, ginger spice and mangos.
After 10 long years in cask, the spirit was then
transferred to the finest Tawny Port pipes from
Porto, Portugal where it would rest for a further
nine years. During this time the spirit is nurtured
by the cask, gifting enticing notes of chunky
marmalade, bitter chocolate and rich plums.
This whisky is an unforgettable masterpiece.
Tasting notes:
Colour – Deep mahogany gold with
shimmering highlights of ruby amber.
Nose – Ripe plums, citrus fruits and
marzipan with whispers of ginger spice,
mangos and fleshy grape pulp.
Taste – Sweet pear, thick chunky marmalade,
bitter chocolate and crushed almonds.

Dalmore Constellation 1976, Cask No. 3
Maturation Journey:
The long years in American white oak have certainly
not diminished this outstanding single malt.
For 35 years the spirit slumbered in the cask,
gifting it with a beautiful inner world of bramley
apple, peaches, kiwi fruits and macaroons.
Tasting Notes:
Colour – Amber, dazzling gold with glints of copper.
Nose – Creamy caramel, vanilla fudge and marzipan
are interlaced with pineapple, tangerines, lemon
cheesecake and sandalwood. These aromas are finally
fused with rich praline, Peach Melba and ginger.
Taste – Bramley apples with peaches and cream,
chewy toffee, kiwi fruits and macaroons open,
before a final fanfare of Turkish delight, honeyed
pears, freshly baked rye bread and marzipan.

Dalmore 40 Year Old
The Story:
This 2022 edition was initially matured in
American white oak ex-bourbon casks, before
being transferred into 30 year old Matusalem
oloroso sherry casks. This precious liquid was
then blended with spirit which was matured in
American white oak ex-bourbon casks and then
Graham’s Port Colheita casks from 1970, creating
a whisky which is indulgent, smooth and complex.
Tasting Notes:
Aroma – Cherries, plums, sultanas,
toffee apple and vanilla pod.
Palate – Orange peel, chocolate truffles,
Old English marmalade and crushed walnuts.
Finish – Black Forest fruits, poached pear
laced with caramel and dark chocolate.

Dalmore Quintessence
The Story:
The Dalmore Quintessence is the first and only
single malt whisky in the world with a five red wine
cask finish. Master Distiller Richard Paterson
travelled to California to hand select the five different
casks in which this exceptional whisky would be
matured; Zinfandel, Pinot Noir, Syrah, Merlot and
Cabernet Sauvignon, each bringing their individual
nuances to create a totally unique single malt.
Tasting Notes:
Aroma – Black Forest fruits, marmalade
and honeycomb.
Palate – Tropical fruits, ginger and sun dried raisins.
Finish – Cassis, orange and fresh baked banana.

Dalmore 25 Year Old
The Story:
Under the watchful eye of our Master Distiller,
the spirit is initially matured in American white
oak ex-bourbon casks. This gives its first base
of soft vanilla and honey notes. The whisky is
then carefully apportioned between casks which
have held 30 year old Matusalem oloroso sherry
and Tawny Port pipes. It is then brought back
together to harmonise in a first-fill ex-bourbon
cask, creating something truly exceptional.
Tasting Notes:
Aroma – Exotic fruits, citrus, vanilla pods,
treacle toffee and fig cake.
Palate - Madagascan vanilla pods, thick
treacle toffee and chocolate truffles.
Finish - Notes Maple syrup, dark chocolate
and spiced gingerbread.

Rémy Martin Louis Xiii Cognac: The Jeroboam
The Story:
LOUIS XIII Jeroboam contains a blend of the finest
and most precious eaux-de-vie, aged over time and
re-created every year by our Cellar Master to get the
same emotion and same aromatic profile since 1874.
All our eaux-de-vie originate from grapes grown in
Grande Champagne, the premier cru of the Cognac
region. The individual eaux-de-vie have been carefully
selected over time by generations of Cellar Masters
and slowly matured and blended in ancient French
oak casks. Every LOUIS XIII Jeroboam contains
the lifetime achievements of generations of Cellar
Masters, each thinking a century ahead to create
the distinctive taste and aromas of LOUIS XII.
Tasting Notes:
The cognac is served in Christophe Pillet-designed
glasses – a traditional Louis XIII pipette known
as a Spear. The design is such that the deep
reddish-copper liquid poured into the glass
appears like a sunflower in full bloom when
viewed from above. Soon, an aromatic bouquet
of flowers, sweet fruits, and subtle spices are
accompanied by the endless complexity of ethereal
notes. Louis XIII features a melting pot of aromas
evoking passion fruit, honey, myrrh, honeysuckle,
dried roses, cigar box, plum, leather and figs.

Graham’s the Master Single Harvest Tawny Rare Port 1950
The Story:
Paying tribute to three generations of cellar masters,
coopers and tasters that have accompanied its
ageing for over seven decades, Graham’s 1950
Single Harvest Tawny Port will be released as
the rarest wine in The Cellar Master’s Trilogy
collection. Bottled under ‘The Master’ label.
As Europe began slowly rebuilding its ravaged
economy from World War II, only limited quantities
of the best parcels of wine of the 1950 harvest were
set aside for long-term ageing. Over time, these
casks were used for blending with other wines and
very little has reached us. Charles Symington has
now decided to release just half of the last cask.
This remarkable wine is a celebration of the deep
complexity and balance that only experience can craft.
Tasting Notes:
The deep auburn center reflects the wine’s amazing
concentration, while the pale ochre rim signals
its venerable age. A flourish of aromas reveals
walnuts, soft caramel and honey notes, demerara,
citrus preserves and Cigar box scents. The
voluptuous palate — simultaneously intense and
delicate — unravels layers of refined, rich citrus
fruit and soft caramel, with a beam of freshness
providing exquisite balance. Pleasant traces of
tobacco leaf and mocha make for a lingering finale.
